How the curing works
To cure bacon, you use salt, sometimes with sugar, and maybe some herbs like pepper or thyme. These are the cure, they’re like a team of helpers that work together to keep the bacon from getting soggy or smelly.
You put the pork belly in a bag with all these ingredients, seal it up, and let it sit for about a week. During this time, the salt moves into the meat, taking out some of the water, kind of like when you leave wet socks in a bag overnight and they get less smelly.
After that, you dry the bacon by hanging it somewhere cool and not too humid. This makes the skin nice and crispy, just like when you dry your hands after washing them.
Then comes the best part: frying it up! You heat a pan with some oil or butter, add the bacon, and watch it turn golden and crunchy, like little pieces of joy on your plate! Curing bacon is like giving it a superpower so it stays tasty for a long time, no magic needed!
Bacon is just pork belly, and to make it delicious, we need to cure it. Curing means we give it special ingredients that help it stay good for weeks or even months.
